Allan Scott Merlot continues to advance as we develop this generally warm climate variety both in the vineyard and winery in order to enhance the ripe fruit characteristics
Viticulture
The fruit for the wine came from low cropping vines on the warm and sunny Hares Vineyard. The grapes were carefully monitored and the fruit was allowed to ripen to full maturity before being harvested in late April. Two cane pruning, shoot removal, bunch thinning and leaf plucking around the bunch zone ensured the fruit was exposed and reached physiological ripeness.
Vinification
The fruit was destemmed into small stainless steel fermenters for an 8 day soak before being inoculated and fermented on skins with selected yeasts at warm temperatures. At the height of fermentation the tanks were hand plunged up to 5 times daily during ferment. After pressing and settling the wine was racked to a mixture of French and American Oak of which 30% was new. The barrels subsequently underwent malolactic fermentation attributing to integration of tannin, balance and flavour. Post ageing on lees for 12 months the wine was blended, fined and ready to bottle.
Description
Allan Scott Merlot is a medium-bodied wine displaying a rich ruby colour and lifted primary fruit aroma of plums and currants combined with hints of chocolate, spicy/toasty oak and herbal tones. The palate displays integrated oak and soft tannins with a youthful and balanced acidity creating an elegant wine which will continue to develop over the next 5 years.
Serving Suggestions
Allan Scott Merlot is the perfect accompaniment to red meats and wild game. Best served at room temperature and given a little time to breathe.
