Allan Scott THE WALLOPS Marlborough Chardonnay 2006

Our Prestige Single Vineyard range of wines are produced from our best estate grown grapes and reflect low yield vines and meticulous viticulture. Special attention in the cellar in terms of handling, employing high tech and traditional methods, result in these elegant wines of limited production.

Viticulture

All the fruit for our Prestige Single Vineyard range originate from particular unique sites of the Estate. The vines are pruned back to two canes in winter and during the growing season they undergo meticulous vineyard husbandry techniques to ensure very ripe and clean fruit free from any vineyard disease.


Vinification

Each batch of selected grapes was hand-picked in the cool of the morning and then whole bunched pressed, and the juice settled at cool temperatures. This was then barrel fermented individually using both selected and wild yeast, in mainly new French oak at cool temperatures. When the alcoholic fermentation is near completion the wine is allowed to go through a full malolactic fermentation and then a further maturation in barrels for up to 18 months with regular lees stirring.


Description

The Wallops Chardonnay 2006 has complex aromas with toasty, savoury and spicey notes and malolactic characters, with a hint of reduction and mellow French oak. A good acid backbone retains the freshness of this well rounded chardonnay.


Serving Suggestions

The Wallops Chardonnay 2006 is beautiful drinking now however it will develop complexity and maturity with careful cellaring for up to 5 years. This style of Chardonnay is an ideal accompaniment with poultry, pork, rich seafood or pasta. Serve lightly chilled
