Viticulture
With almost all of our Estate owned vineyards now producing fruit, we have the ability to take advantage of individual characteristics of each particular vineyard. With different soil types and vine age at particular sites we can obtain a mouth-filling profile of flavours from typical Marlborough herbaceousness, to very ripe tropical flavours.
Vinification
Sauvignon Blanc is truly a variety that is made in the vineyard. Clean and ripe fruit will always produce great Sauvignon Blanc. After pressing, the wine is chilled and allowed to settle over a 24 hour period. The wine is then racked, inoculated and fermented at cool temperatures for 15-20 days. After fermentation and maturation the various tanks are brought together to make a final blend.
Description
An aromatic mix of green fruit tones with underlying ripe tropical aromas adding complexity. Flavoursome hints of pineapples and passionfruit with mild herbaceous characters. A textured palate giving great mouthfeel with an enduring, structured and well balanced finish
Serving Suggestions
There are many occasions to enjoy Sauvignon Blanc, either as an aperitif, on its own or accompanied by seafood or salad dishes. Serve lightly chilled.
