Sara, the youngest of the scott siblings, is both a winemake and a viticulturist, and is enthusiastic to work as harmoniously as possible with the ingredients and surroundings of her craft. While all of our vineyards are managed sustainably, Sara’s wish has been to transform all of Millstone Vineyard to a total organic culture as the first step to a complete transformation of all our vineyards
Viticulture
The fruit comes exclusively from the Millstone Vineyard which was converted to organic after the Harvest of 2007. Culivated exclusively under BioGro principles the usual sprays were replaced with alternatives including compost teas and other homeopathic preparations
Vinification
After pressing, the wine was chilled and allowed to settle over a 24hr period. Using only wild yeasts the wine went through a slow fermentation with a small percentage being fermented in old oak barrels with regular battonage.
Description
Delicate lime passionfuit and melon with a distinct minerality and well integrated oak contribute to the rich and complex palate. The wild yeast funkiness and the distinct natural acid makes a lingering finish.
Serving Suggestions
A real food wine to be enjoyed with fish, seafood and salad dishes. Try also with melon and mild goats cheeses. Serve lightly chilled.
