Allan Scott WALLOPS Marlborough Chardonnay 2008
Our Prestige Single Vineyard range of wines are produced from our best estate grown grapes and reflect low yield vines and meticulous viticulture. Special attention in the cellar in terms of handling, employing high tech and traditional methods, result in these elegant wines of limited production.
Viticulture
All the fruit for our Prestige Single Vineyard range originate from particular unique sites of the Estate. The vines are pruned back to two canes in winter and during the growing season they undergo meticulous vineyard husbandry techniques to ensure very ripe and clean fruit free from any vineyard disease.
Vinification
Each batch of selected grapes was harvested in the cool of the morning, pressed, and the juice settled at cool temperatures. This was then barrel fermented using wild yeasts, in French oak at cool temperatures. When the alcoholic fermentation is near completion the wine is allowed to go through a full malolactic fermentation and then a further maturation in barrels for 12 months with regular lees stirring.
Description
Barrel fermented with full solids using indigenous yeasts, this wine was created to have many levels of complexity. Hints of lemon citrus aromas are surrounded by the oak and reductive funk caused by the yeast on the grape solids. This wine was allowed to go through 80% malolactic fermentation adding a creamy dimension to the mid palate but not distracting the focus of the luscious lemon acidity. These complexities give an interesting tasting journey that is integrated, well structured and lingering.
Serving Suggestions
The Wallops Chardonnay 2008 is drinking beautifully now however it will develop complexity and maturity with careful cellaring for up to 5 years. This style of Chardonnay is an ideal accompaniment with poultry, pork, rich seafood or pasta. Serve lightly chilled
