Allan Scott HOUNDS Marlborough Pinot Noir 2008

Our Prestige Single Vineyard range of wines are produced from our best estate grown grapes and reflect low yield vines and meticulous viticulture. Special attention in the cellar in terms of handling, employing high tech and traditional methods, result in these elegant wines of limited production.

Viticulture

Pinot Noir is one of the most labour intensive grape varieties in both the vineyard and the winery. After initially pruning to two canes in winter, the vines then have a host of other activities carried out to ensure a high quality is achieved. These techniques include; shoot thinning, leaf plucking, bunch thinning, and are then harvested when the grapes are at their optimal balance and ripeness.


Vinification

The grapes were picked in the cool of the morning, after which they were promptly destemmed, and cold macerated in tank for up to 7 days. Fermentation occured naturally, with a rigorous routine of pumping over and lively plunging, until the fermentation died down. The wine was then left to macerate on its skins for a further 10 days before being drained, settled and barrelled down into mainly new French oak, followed by a natural malolactic fermentation.


Description

Dark berry fruits on the nose combine with a savoury spiciness and chocolate tones which are supported by the French oak. The palate displays a well balanced range of characteristic pinot fruit flavours with dark cherry & plum, nice acidity, integrated mouth-filling tannins and oak, with chocolate complexities.


Serving Suggestions

This wine will develop beautifully with age. Cellar up to 5 years. Match with wild game and other red meats or enjoy with a wide range of cheeses or just on its own. Serve at room temperature.
