Viticulture
As our vineyards age, definitive characteristics emerge especially in the more diverse locations that some of our vineyards are located. Winter pruning practices now limit the bud numbers left for fruiting which reduces the crop considerably increasing flavour intensity and ripeness. A very open canopy is adopted and vine growth restricted by careful day to day management.
Vinification
The vineyard sites are harvested at varying times and batch processed. A majority of the wine is barrel fermented in anmixture of new, one, two and three year old French oak barriques and left on lees for six to seven months with some occasional 'batonage'. A partial malolactic fermentationis encouraged and the final blend is constructed from the best of the barriques and a little tank ferment to suit the blend and keep flavour/style continuity.
Description
The creamy nose has nutty characters overlayed with ripe stonefruit flavours. The palate has good length and structure originating from the concentrated fruit and natural acid that will help the wine to age gracefully for years. The oak treatment is subtle and intergrated well with the fruit and noticeable acidity.
Serving Suggestions
Designed as a food freindly wine it is recommended with most dishes except those with a hint of spicyness. Superb drinking on its own. Serve lightly chilled.
