Viticulture

With almost all of our Estate owned vineyards now producing fruit, we have the ability to take advantage of individual characteristics of each particular vineyard. With different soil types and vine age at particular sites we can obtain a mouth-filling profile of flavours from typical Marlborough herbaceousness, to very ripe tropical flavours.

Vinification

Sauvignon Blanc is truly a variety that is made in the vineyard. Clean and ripe fruit will always produce great Sauvignon Blanc. After pressing, the wine is chilled and allowed to settle over a 24hr period. The wine is then racked, inoculated and fermented at cool temperatures for 15-20 days. After fermentation and maturation the various tanks are brought together to make a final blend.

Description

A powerful wine showing intense aromas of passionfruit and gooseberry with undertones of lime and a subtle mineral note. It is full and rich with firm but balanced acidity and has powerful passionfruit and ripe nutty notes on the palate. Subtle fragrances of honeysuckle and lime add complexity and depth to the long lingering finish

Serving Suggestions

There are many occasions to enjoy the 2005 Sauvignon Blanc, either as an aperitif, on its own or accompanied by seafood or salad dishes. Serve lightly chilled.
